Machcha Patropoda also known as the “Fish wrapped in Banana Leaf” has been a staple of Orissa’s cuisine for decades. It has not only gotten national acclaim but has also managed to sway the taste buds of those abroad. It is a wonderful combination of the crisp and juicy fish with the delicate flavor of the banana leaf. It is a dish that takes a short time to prepare and can be enjoyed on a number of occasions.

Ingredients
ginger: 1 tsp
garlic: 1 tsp
cumin seeds: 1 tsp
Mustard seeds: 1 tsp
whole dry red chilies: 3
Whole fish: 1
masala: 2 tsp
tsp of salt: 1/4
chopped green chilies: 1 tsp
turmeric: 1/4 tsp
curry leaves: 7
Chopped coriander leaves
sliced onion: 1
mustard oil: 1 tbsp
How To Make Machcha Patropoda
- Make sure the fish you use is fresh and properly scaled.
- The best kind of fish to use would be a medium sized one.
- Once you’ve de-scaled the fish, clean out its insides.
- Thoroughly clean the fish and cut it into small pieces.
- Clean these pieces separately using ice cold water.
- To prepare the masala; add salt, green chilies, turmeric, curry leaves, coriander leaves and mix them well.
- Once they’re properly mixed and gain a golden brown texture add onions and mustard oil.
- Continue mixing until the onions have the golden brown texture as well.
- Turn off the heat and let it simmer for 10 minutes.
- Take out this masala and leave at room temperature.
- Properly marinate the fish pieces using the masala.
- Once you’ve properly marinated the fish, wrap them up in the banana leaf.
- You can cut and scale the banana leaf pieces as per the size of servings you want.
- Tie up these banana lead wrapped fish with a thread.
- Place these sealed banana leaves on coal.
- Let them cook on the coal for 15-20 minutes.
- Serve them hot.
