idiyappam – crushed: 4 cup
oil: 2 tsp
black mustard seeds: ½ tsp
cashew nuts – chopped: 2 tbsp

pinch of asafoetida: 1
lemon juice – adjusted to taste: 2 tbsp
turmeric powder: ¼ tsp
salt to taste
How To Make Lemon Sevai
- Prepare the idiyappam.
- Let it completely cool.
- Crush into smaller broken 'noodles' using your fingertips
- Measure out 4 cups and set aside.
- Heat 2 tsp oil.
- Add ½ tsp mustard seeds.
- Add the broken cashew nuts once the mustard seeds begin to pop
- Roast until they turn golden brown.
- Add the ginger, green chillies, and curry leaves.
- Sauté until the ginger turns fragrant and the chillies turn softer - about 1 minute.
- Add turmeric powder, lemon juice, and salt.
- Mix well.
- Add the sevai or idiyappam
- Mix well while making sure the flavors are balanced well.
- Adjust salt or lemon juice as required.
