Ingredients

cup basmati rice: 1

onions: 2

tbsp minced ginger: 2

tbsp minced garlic: 2

green chilies: 2

cup chopped mint leaves: 1/4

cup chopped coriander leaves: 1/2

tomatoes: 3

tbsp turmeric powder: 1/2

tbsp chili powder: 1

cinnamon stick: 1

bay leaves: 2

cloves: 2

green cardamoms: 3

pepper corns: 4

tbsp oil: 3

cup curd: 1/4

cup water: 1

vegetable stock: 1 cup

How To Make Kuska Biryani

  1. Wash rice and soak it in cups of water for 30 minutes.
  2. Heat oil in a pot and fry whole spices until aromatic.
    1. Add diced onions and green chilies and sauté till the onions are translucent.
    2. Add the ginger and garlic.
    3. Add the tomatoes and salt when the garlic and ginger is nearly brown and begin to release an aroma.
    4. Add the chopped mint and coriander leaves once the tomatoes are mashed.
  3. Add turmeric and chili powder and sauté till the raw smell of the powders go away.
  1. Stir in curd and and let the mixture cook for 4 minutes.
  2. Add the water and vegetable stock and bring to a boil.
  1. Add rice and cook on a low flame till the water evaporates completely and the rice is cooked.
  2. Serve and enjoy!
