Kentucky’s Legendary Brown Sandwich

Ingredients

boneless turkey breast, with skin (2lbs): 1

tablespoons of extra virgin olive oil: 3

kosher salt as per taste

freshly grounded black pepper as per taste

tablespoons of butter, unsalted: 4

cup of all-purpose flour: 1/4

cups of milk: 2

cup of shredded Cheddar: 1/2

cup of grated pecorino: 1/2

pinch of freshly grated nutmeg

thick slices of bread, toasted: 4

large tomatoes, sliced: 2

pinch sweet paprika

chopped fresh parsley: 1 tbsp

slices cooked bacon: 8

How To Make Kentucky’s Legendary Brown Sandwich

For the turkey bacon

  • Preheat the oven to 350°F.
  • Gently rub the whole turkey breast with olive oil and generously sprinkle salt and pepper on the meat.
  • Place the turkey on a roasting pan and cook until it begins to brown, about 50 minutes.
  • Increase the heat to 420° F and roast until the skin gets golden and crispy
  • Take out the turkey from the oven and allow it to cool.
  • Cut the cooked turkey breast into thick slices of about 1/4th of an inch.

For the sauce

  • Put butter and flour in a sauce pan and cook them over medium heat for 5minutes while stirring continuously.
  • The roux will be slight golden in color.
  • Raise the heat to medium-high and add the milk in the mixture.
  • Whisk thoroughly for about 5 minutes until the sauce gets thicken.
  • Season the batter with salt and pepper as per your taste.
  • Remove the pot from the heat and stir in the Cheddar, pecorino and nutmeg.

For the sandwich

  • Preheat the broiler.
  • Lay down the thick bread slices on a large pan.
  • Equally top the sliced turkey over the bread.
  • Layer with the bacon, sliced tomatoes and pecorino.
  • Now generously pour down the thick sauce over the sandwiches.
  • Broil the sandwiches until the sauce turns a bit brownish, about 5 minutes.
  • Transfer the sandwiches to a plate and sprinkle with the paprika and parsley.

Trivia
The brown sandwich was first introduced at the Brown hotel in 1920’s by a chef named Fred K. Schmidt in Louisville, Kentucky. He came up with this idea to feed the late night revelers at the hotel.
