Karnataka’s Jackfruit Dosa

Indian dosa is one of the most iconic food items in the world. It is a bit of a compromise between a traditional western doughnut and a fritter. The Karnataka Jackfruit dosa puts a new and interesting twist on this classic food dish. Unlike some dosas, this one is naturally pretty sweet, so you won’t have to utilize outside sweeteners. They are also a great source of protein which makes them a pretty fantastic breakfast food.

There is almost never a reason to not enjoy a jackfruit dosa.

Ingredients

20 jackfruit pieces – seeds removed and set aside

½ cup rice – washed and soaked in water

¼ cup jaggery powder

A bit more than ¼ cup grated coconut

½ tsp Salt

3 cardamoms

Ghee or oil for dosa

How To Make Karnataka’s Jackfruit Dosa

  1. Drain some water into a cup.
  2. Grind the soaked rice along with the jaggery, coconut, cardamoms, and salt, into a fine paste.
    1. Add water if necessary
  3. Transfer this to a bowl and grind the jackfruit separately until it becomes a fine paste.
  4. Add the paste to the rice batter and mix thoroughly.
  5. Set mixture aside for 10 – 60 minutes.

To make the Dosa:

  1. Grease and heat the tava or pan at a medium temperature.
  2. Pour a ladle of dosa batter in the center once the pan is hot enough.
  3. Spread the batter in a circular motion from the center.
  4. Add ghee/oil around the edges and to the center.
    1. Cover it with a lid.
  5. Flip the dosa to the other side and add a little ghee.
    1. Allow it to cook.
  6. Remove the dosa and repeat the procedure using the remaining batter.
  7. Eat the dosas with liquid jaggery, ghee, or honey.
