This recipe for kadalai paruppu sundal sounds very fancy, but it is actually one of the simpler types of dishes you will ever try to make. Essentially, this dish is just a variation on a standard dish of chickpeas. The most unique thing about the dish is its cooking process. To make proper sundal, you will have to learn to temper and sauté chickpeas so that they’re not too soft and not too hard. But once you get the cooking process down, you will want to make this dish repeatedly.
