Generally, a gluten-free diet is one that doesn’t include the grains, barley, wheat, rye, or their hybrids. This also includes any form or variety of these grains, like spelt and malt. They are called gluten-free because of the Gluten protein present in these.

A lot of people follow a gluten-free diet because of certain medical conditions such as Celiac disease while others do it for simple taste enjoyment. Whichever category you fall in, everyone knows it’s hard to give up cookies. So, here are some delicious gluten-free cookies recipes for you to try.

Ingredients

egg substitute: ¼ cup

butter – softened: ¾ cup

white sugar: 1 cup

packed brown sugar: 1¼ cup

gluten-free baking mix: 2¼ cup

gluten-free vanilla extract: 1 tsp

semisweet chocolate chips: 12 oz

baking soda: 1 tsp

baking powder: 1 tsp

salt: 1 tsp

confectioners' sugar: 1 cup

white sugar: ½ cup

almond paste: 12 oz

pine nuts: 1½ cup

egg whites: 4

peppermint extract: 1½ tsp

sweetened condensed milk: ¾ cup

semisweet chocolate chips: 3 cups

confectioners' sugar: 4 cups

shortening: 2 tsp

How To Make Gluten Free Cookies

  1. Preheat your oven to 375 ˚F/ 190 ˚C.
  2. Grease and prepare a baking sheet.
  3. Mix cream, sugar, and butter in a large bowl.
  4. Gradually add vanilla and replacer eggs while you’re mixing.
  5. Sift together baking soda, gluten-free flour mix,baking powder, and salt.
  6. Stir into the prepared butter mixture until properly blended.
  7. Add the chocolate chips and stir everything well.
  8. Use a tsp to drop cookies (with a distance of 2 inches between each one) on the baking sheet you’ve prepared.
  9. Bake for 6-8 minutes in preheated oven or until it turns light brown.
  10. Leave the cookies on the baking sheet and let cool for about 2 minutes before transferring to your wire racks.
  11. Your delicious gluten-free chocolate chips cookies are finally ready to serve.
  1. Preheat your oven to 325 OF/ 165 O
  2. Use foil to line 2 cookie sheets, and grease the foil lightly.
  3. Mix granulated sugar and almond paste in a food processor, until smooth.
  4. Add 2 egg whites and confectioner’s sugar, then process until very smooth.
  5. Whisk the 2 remaining egg whites in a bowl.
  6. Put pine nuts in a plate.
  7. Flour your hands lightly and roll dough into 1 in balls.
  8. Use the egg whites to coat balls and shake off excess.
  9. Roll them in pine nuts and lightly press to stick.
  10. Arrange the balls on cookie sheets, and flatten slightly to make 1½ inch round.
  11. In the preheated oven, bake for 15-19 minutes, or until cookies turn a light brown.
  12. Leave on cookie sheet for 1 minute; transfer to wire rack to cool.
  13. Your delicious pignoli cookies are ready to serve.
  1. Combine peppermint extract and condensed milk together in a mixing bowl.
  2. Gradually beat in confectioners’ sugar to make dough that’s stiff and no longer sticky.
  3. Make into 1inch balls, and then put them on waxed paper and use your fingers to flatten to form patties.
  4. Leave patties to dry for 2 hours at room temperature, turning once.
  5. Over low heat, melt chocolate and shortening in a saucepan, stirring once.
  6. Turn off heat and dip pattiesinto chocolate,one at a time, by lower them into the chocolate with a fork.
  7. Let cool on waxed paper until they set.
