There is just about no greater snack out there than these easy veggie samosas. Samosas make up an important part of Indian cuisine. They are so popular that they have expanded all across the world. Essentially, samosas are fried or baked dishes stuffed with savory fillings like potatoes, lentils, peas, and onions. They are most similar to dumplings except they are most often eaten alongside chutney. These veggie samosas are also great for vegans, just make sure to eat them fresh.

Ingredients

tbsp vegetable oil: 1

cup onion chopped: 1/2

oz garbanzo beans: 57

tbsps curry paste: 2

cup apple juice: 1/2

sheets frozen puff pastry thawed: 3

cup all-purpose flour for dusting: 1/4

How To Make Easy Veggie Samosas

  • Preheat oven to 350°
  • Heat oil in a large skillet at a medium-high temperature.
  • Sauté onion until browned.
  • Reduce heat and add garbanzo beans.
  • Mix the curry paste with apple juice until it turns smooth.
    • Add to skillet.
  • Simmer mixture for 10 minutes while stirring occasionally.
    • Add more water or apple juice as necessary to keep the mixture moist.
  • Cut each pastry sheet into 3 equal-size rectangles.
    • Cut each rectangle in half.
    • Note: You will have 18 pieces in total.
  • Lightly dust a clean, flat surface with flour.
  • Roll each piece of pastry until it doubles in size.
    • Note: Dust pastry with flour as necessary to prevent it from sticking to the rolling pin.
  • Spoon an equal amount of filling into center of each pastry square.
  • Fold in half and press the edges together to form a seal.
  • Place the samosas on nonstick baking sheets.
  • Bake in preheated oven for 25 minutes until they turn a golden brown.
