Drunkard’s soup, or soupe a l’ivrogne is a Quebecois version of onion soup with additions of bread. Since it contains bread, it can also be called bread soup. The soup is preferred especially during winters. There are some people who may dislike dipped or soaked bread, soaked break was also known as sops during the Middle Ages. It adds bulk to the soup. How To Make Drunkard’s Soup

  • In a frying pan, heat oil and caramelize the onions.
  • In a casserole, add bread and cheese layers. Finish off with another layer of cheese.
  • Spread onions over the top.
  • Add vegetable stock and cider on top. Add seasonings.
