Summers are here, and so are cucumbers and watermelons. Time for those refreshing salads on the table which don’t have to be boring and bland! Who wouldn’t binge on these healthy, yummy salads when they outrun even the main courses when it comes to taste? Well, you are in for a colorful, delicious and cheesy treat with this salad. What’s more? You get to add your favorite feta cheese along.

This refreshing salad is a feast to the eyes itself. Add a few basil leaves and mint leaves for the mint flavor and a dash of lime juice for the much-needed tanginess. You can serve this salad for that brunch party you were planning on or on a simple family dinner, whatever the occasion, this is a recipe that will not let you down.

Cucumbers are very low in calories but rich in Vitamins and Minerals like Vitamin c, Vitamin K, protein, Fiber, magnesium, potassium, manganese, etc. Cucumbers consist of antioxidants like flavonoids and tannins, which prevent heart, lung and autoimmune diseases and also certain kinds of cancers.

Watermelon has 92% of water content in it and is also rich in vitamin A, vitamin C, Potassium, Magnesium and Vitamins B1, B5, and B6. As watermelons are rich in anti-inflammatory compounds like lycopene and vitamin C, they are known to lower inflammation and oxidative stress.

Ingredients

English cucumber: 1

small watermelon: 1

feta cheese: 5 ounce

Ground black pepper

lime juice: 1 tbsp

fresh basil leaves: 2 tbsp

fresh mint leaves: 2 tbsp

How To Make Cubed Watermelon, Cucumber, and Feta Salad

  • Peel the cucumber and chop off the ends.
  • Cut the cucumber into two halves and chop them into 1-inch cubes.
  • Cut the watermelon into half and discard the rinds and cut the flesh of the watermelon into 1-inch cubes.
  • Cut the feta block into 1-inch cubes.
  • Start by arranging your serving platter.
  • Arrange the watermelon cubes, cucumber cubes, feta cubes alternatively.
  • Create a two layer or three layer pattern.
  • Garnish with olive oil, black pepper, fresh basil leaves, and fresh mint leaves.
  • Sprinkle lime juice on top and serve!
