Cow’s Tongue in Sauce

Cow’s Tongue in Sauce is a dish that is almost the same as Beef Stroganoff.

The  tongue pieces are flavorful and the sauce is extremely rich.

The dish runs well with any grain, pasta, or even pureed potatoes. To accelerate the cooking process of the tongue, cook it in an Instant Pot for around 70 minutes.

Ingredients

beef tongue: 1

lime juice: 1 cup

cloves garlic: 6

red bell pepper, chopped: 1 cup

roll oregano, grind: 1

rib celery, chopped: 1

tomato, unseeded and chopped: 1 cup

laurel leaves: 4

carrots—chopped: 1 cup

Worcestershire sauce: 1/2 cup

bunch cilantro, chopped: 1

cloves: 3

cinnamon sticks: 3

Raisins: 1 cup

spanish olives: 1 cup

fresh petit pois: 1 cup

cappers: 2 tsp

ketchup: 1/2 cup

mustard: 1 tbsp

Salt and pepper to taste

How To Make Cow’s Tongue in Sauce

  1. Take a sauce pan and fill with water.
  2. Put the tongue in boiling water and let it boil till the tongue’s skin is tender, roughly about 15 minutes.
  3. Remove and wash it in cold water and strip the outer whitish skin. Rub lime juice on the tongue.
  4. Next, put the tongue in the saucepan again. Fill up with water until it is completely covered.
  5. Cover up and let boil over medium heat. Include tomato, garlic, onions, red bell peppers, bay leaves, cloves, cinnamon, oregano, celery, carrots, cilantro and Worcestershire sauce.
  6. Reduce heat to low, cover up, and let cook for about 3 hours, until the tongue is tender.
  7. If you see that the water has evaporated, include more accordingly to maintain the level.
  8. When the tongue is soft, preserve the liquid and transfer the tongue to a chop board. Slash it into thin slices.
  9. Add the boiled tongue to the blender and liquefy. Then strain.
  10. Put 1 ½ cup strained liquid in the saucepan. Include 3 cloves, raisins, Spanish olives, petite pois, ketchup, mustard, salt, and pepper to taste.
  11. Bring the mixture it to a boil. Let seethe for 20 minutes.
  12. Dispense sauce on top of the tongue and serve with rice or any other sideline you like.
