Who said soups are perfect for winters and always had to be hot? Imagine, in summers you need a snack between your meal times and you do not want to have a drink. Soup is indeed a good option.

One important thing is cold soup must be really cold, just as hot soup must be really hot, to be tasty. And, cold soups call in for a little more detail. A chilled cantaloupe Soup is very easy to prepare. It is creamy and also energizing!  You can use it as a starter for lunch during parties or have it before supper. You can even have it in the morning or as a late afternoon snack.

Chilled cantaloupe soup is also healthy, light for your tummy, and you can’t compare it with other soups. Don’t compare it with a ‘drink’ either! Just remember it is a perfect soup for a hot summer day!

Cantaloupe is heart-healthy and contains high concentrations of the vital antioxidants, vitamins A and C. Cantaloupe is known to add in decrease risk of death from all causes, including heart disease and stroke.

It is packed with vitamin C, vitamin A which helps to prevent heart attack or stroke and stop free insurgents from oxidizing cholesterol in the bloodstream.

Ingredients

1 cantaloupe - peeled, seeded and cubed

2 cups orange juice

1 tbsp fresh lime juice

¼ tsp ground cinnamon

How To Make Chilled Cantaloupe Soup

  • Peel, seed, and cube cantaloupe.
  • Place cantaloupe and 1/2 cup orange juice in a blender or food processor; cover, and process until smooth.
  • Transfer to a large bowl.
  • Stir in lime juice, cinnamon, and remaining orange juice.
  • Cover liquid mixture and refrigerate for at least one hour.

TIP:

 Garnish with mint if desired. Greek yogurt adds a creamy texture in addition to adding protein, making it perfect. Very refreshing fruit soup served chilled.  Great for luncheons.  Besides being absolutely delicious, it is so healthy and quickly made.
