Ingredients

kg chicken breasts, cut into small cubes: 1.5

red bell pepper, chopped into thin strips: 1

yellow bell pepper, chopped into thin strips: 1

tsp olive oil: 1

cups chicken stock: 3

big tomatoes- sliced: 400

teaspoon white flour: 2

onion thinly sliced: 1

garlic cloves, minced: 3

tablespoon ginger, chopped: 1 1/2

teaspoon ground oregano, dried: 1

habanero peppers, fine chopped: 2

teaspoon chili flakes: 1

tablespoon paprika: 1

bay leaf: 1

Salt and ground black pepper (for taste)

Coriander, chopped (optional)

Parsley, chopped (optional)

Lime wedge (optional)

How To Make Chicken Pepper Soup

  1. Combine flour and small amount of water in a small bowl and set it aside.
  2. Rinse chicken thoroughly and cut it into small pieces of desired size.
  3. Transfer chicken cubes to a large bowl.
  4. Add garlic, ginger, salt, and black pepper to the bowl.
  5. Toss to coat chicken with the ingredients. Keep the bowl in refrigerator for half an hour to marinate it.
  6. Meanwhile, add onion, and habanero pepper in a medium cooking pot. Cook at medium heat until the ingredients soften.
  7. Add chicken stock, tomatoes, paprika, chili flakes, oregano, and bay leaf to the cooking pot and cook at medium heat. Add mixture of flour paste to adjust the consistency.
  8. Add marinated chicken and red and yellow bell pepper to the cooking pot. Lower down the heat and cook for 10 minutes or until chicken is cooked properly. Bring soup to a boil.
  9. Remove bay leaf.
  10. Taste the soup and adjust its flavor with salt and black pepper.
  11. Transfer soup to a serving bowl.
  12. Garnish it with coriander leaves, parsley, and lime wedges.
  13. Serve it while it’s still hot!
