Chicken Mull

Chicken mull or as commonly known as chicken stew is a traditional dish from North Carolina. This is made by boiling chicken in cream or a milk-based broth. You can include any spices of your choice to season the chicken mull. Black pepper, red chilies and salt are common seasonings used while preparing chicken mull.

Traditionally served as breakfast, this dish makes for a healthy meal regardless of the time it is served. One can even add various vegetables if they feel like it.

Ingredients

cup sliced mushrooms: 1

cups diced and cooked red potatoes: 2

cup chopped onions: 1/2

cups cooked, cubed chicken breast meat: 4

cup chopped carrots: 1

cups of chicken stock: 5

tsp dried sage: 1/2

tsp dried basil leaves- dried: 1

tsp dried parsley: 1

tsp garlic salt: 1

cup chopped celery: 1/2

cup all-purpose flour: 1/8

How To Make Chicken Mull

  1. Season boiled chicken with salt and pepper and let rest for 5 minutes.
  2. Heat oil in a pan, sauté celery until translucent, add the seasoned chicken and sauté until the chicken is browned.
  3. Blend garlic, tomatoes and onions into a paste and pour over the roasted chicken and give the mixture a quick stir.
  4. Add the vegetables and dried herbs.
  5. Whisk flour into chicken stock and add to the mixture. Stir to combine and let simmer until the chicken is cooked completely.
  6. When the stock reaches the thickness to your preferred consistency, remove from heat. Your chicken mull is ready. Enjoy!

TRIVIA

Bowls of mull are sometimes incremented with coleslaw, rice or grilled cheese sandwiches. In North Carolina and Georgia, chicken mull is often served at social events held during the colder seasons.
