Chicken 65 got its unusual name because of its popularity in many Indian restaurants where it always appeared as the 65th option on the menu list. Stories go that diners would not care but just order food number 65.

To prepare chicken 65, you will need the usual Indians spices plus a chicken breast or whole chicken, if the family is big. The chicken is battered and fried crisp on the outside then seasoned with a flavorful mixture of spices, ginger, garlic, curry leaves, and green chilies.

Ingredients

chicken breast and drumsticks: 2 1/4 lb

eggs--beaten: 2

ginger-garlic paste: 2 tbsp

cornstarch: 4 tsp

rice flour: 4 tbsp

ground turmeric: 1 tbsp

ground cumin: 1 tbsp

ground coriander: 2 tsp

chilli powder: 1/2 tsp

tandoori masala: 1 tbsp

salt to taste

ground black pepper: 1 tbsp

Vegetable oil for deep-frying

mustard seeds--powdered: 1 tbsp

cumin seeds: 1 tbsp

curry leaves: 15

green chillies: 4

ginger and garlic--finely chopped

green onions--chopped

lime juice: 1 tsp

chilli sauce (optional): 4 tbsp

How To Make Chicken 65

  1. Cut the chicken into small pieces.
  2. Mix next 11 ingredients (up to the black pepper) in a bowl.  Add the chicken pieces and mix to coat well. Let the mixture marinate for 20 to 30 minutes.
  3. Add enough vegetable oil for deep frying into a large pot.
  4. When the oil is hot, fry the chicken in batches so that the exterior turns brown and crispy. This will take about 5 to 10 minutes per batch.
  5. Drain most of the oil from the pan. Heat pan over high heat.
  6. Add the mustard seeds and cook them until they start to pop. Add cumin seeds, curry leaves, and green chilies then fry for about 20 minutes.
  7. Add chopped garlic and ginger then fry about 2 minutes until they become soft and aromatic.
  8. Add the chicken and green onions and stir well so that chicken is coated. Fry over high heat until the chicken is fully cooked. Add some lemon juice then chili sauce.
  9. Check for seasoning and add some more salt if needed.
  10. Serve chicken 65 with white rice.
