Ingredients

onions julienned: 2

cloves of garlic: 12

stick of cinnamon: 1

tsp of cumin: 1 1/2

pepper corns: 1 1/2 tsp

Coriander seeds: 1 1/2 tsp

Star Anise: 1

cloves: 2

fennel seeds: 1/2 tsp

salt to flavor

chili powder: 1 tsp

Turmeric powder: 1 1/2 tsp

red wine vinegar: 1 cup

tbsp of sugar: 3

oil: 50 ml

tiger prawns: 4

berry masala

dollop of butter: 4

lemon squeezed: 1

handful coriander leaves – chopped

How To Make Butter Fried Scampi

  1. Start heating the pan and add the garlic and onions to it.
  2. Add red chilies, cinnamon, cumin, pepper corns, coriander seeds, star anise, cloves and fennel and sauté them all together.
  3. Keep sautéing them until a brown crisp texture appears on them all.
  4. Add salt and lower the heat.
  5. Roast them all together for 5 minutes.
  6. Now transfer this mixture into a blender and add the turmeric and chili powder.
  7. Once you’ve gotten the powder form, add some red wine vinegar, sugar and oil to it.
  8. This would turn into a nice and frothy mixture which you should transfer to a bowl.
  9. Make sure that you clean and de-scale the prawns before you cook them.
  10. Carefully remove the back shell, and expose the flesh of the prawns.
  11. Dry them off thoroughly and toss them properly with masala.
  12. Once they’ve properly been dusted with the masala, place them in an oven dish.
  13. Now add the butter, and squeeze half a lemon.
  14. Cook these prawns for 10 minutes at 180 degrees C.
  15. Take the prawns out and let them sit for about a minute.
  16. Serve with some chopped coriander.
