This breakfast sandwich is stacked with eggs, ham, and Mexican cheddar sandwiched in a warm English muffin. Devour as is or with hot sauce in case you like a blazing hot breakfast!

Ingredients

English muffin cut in half: 1

Eggs: 2

slices of ham: 4

finely shredded cheese, preferably mexican cheese: 1/3 cup

chives finely chopped: 1 tsp

Salt and pepper to taste

olive oil or butter to sauté: 1 tbsp

How To Make Breakfast Sandwich

  1. Take a large-sized nonstick pan and heat it over medium-high. Sprinkle 1 Tbsp oil.
  2. With its cut-side down, place your English muffin on half of the pan space. Side by side, break 2 eggs 2 eggs on the other half portion of the pan and crack the yolks using a spatula.
  3. Once you see that the eggs are almost cooked, dust with salt and pepper to taste, 1 tsp fresh chives, and half of the shredded cheese.
  4. Put toasted English muffins over the eggs cut-side-down and gently using a spatula.
  5. Turn over the sandwich, egg-side-up. Dispense ham over half of your sandwich and cover with more cheese. Bring the sandwich together and take away from heat.
  6. Serve!
