Beetroot Poriyal

Poriyal is a Tamil dish that roughly translates to fried or sautéed vegetables. It has many variations that make it suitable for many palettes. All poriyals are united by the use of lentils and vegetables. Beetroot poriyal is especially delicious due to the unique crunch factor, and added sourness the beet provides. This poriyal is not only flavorful, but it is spicy to boot. This makes for a feel good side dish that is perfectly suitable for keeping you cool on hot days. Ingredients

large beetroot –peeled and chopped (around 2 cups): 1

water: ½ cup

oil: 1 tbsp

mustard seeds / kaduku: 1 tbsp

urad dal / ulundu paruppu: 1 tsp

sprig curry leaves: 1

salt to taste

chilli powder: 1 tsp

How To Make Beetroot Poriyal

  1. Place chopped beets in a microwave safe bowl and add water
  2. Sprinkle some salt and mix well.
  3. Cook in microwave for 10 mins.
  4. Let stand for 1 min in microwave then remove.

Note: The water should have evaporated; if not drain it.

  1. Heat oil in a kadai and splutter mustard, urad dal and curry leaves.
  2. Add cooked beets and toss to coat.
  3. Fry till they become a light golden color and turn a little crispy.
  4. Add chilli powder and mix well.
  5. Serve and enjoy!
