Traditional hummus is made with chickpeas and spices and served as a dip or spread with bread. This beetroot hummus recipe is a novel variation meant to draw out the unique flavorings of the beet. Ingredients

small roasted beet: 1

cooked chickpeas - mostly drained: 15 oz

large lemon – zested: 1

juiced: ½ lemon

salt: 1 pinch

black pepper: 1 pinch

large cloves garlic - minced: 2

tahini: 2 tbsp

extra virgin olive oil: 1/4 cup

How To Make Beetroot Hummus

  1. Cool and peelbeet.
    1. Quarter it and place it in your food processor.
    2. Blend until only small bits remain.
  1. Add remaining ingredients except for olive oil.
    1. Blend until smooth.
  1. Drizzle in olive oil as the hummus is mixing.
  2. Add seasonings and adjust to taste, adding more salt, lemon juice, or olive oil as needed.

Notes: If it’s too thick, add a bit of water.
