Ingredients

cooked beetroots – pureed and well drained: 250 g

Vanilla extract: 1/2 tsp

caster sugar: 300 g

vegetable oil: 250 ml

Eggs: 3

plain flour: 225 g

bicarbonate soda: 1 1/2 tsp

salt: 1/4 tsp

unsweetened cocoa powder: 6 tbsp

How To Make Beetroot Cake

  1. Preheat oven to 180 °
  2. Grease and flour a 20x30 cm (9x13 in) or similar-sized baking tin.
  3. Combine pureed beetroots, eggs, vanilla, oil and sugar in a bowl and whisk to mix well.
  4. Sieve flour, bicarbonate of soda, salt and cocoa fold into the mix of wet ingredients.
  5. Pour batter into the baking tinand bake for 25 to 30 minutes or until done.
  6. Once completely cooled, remove the cake and refrigerate for about an hour.
  7. Finish of with icing and transfer the cake back into the refrigerator. Let sit for a few hours before serving.
