Avocado curry is probably the ultimate millennial fusion dish. It combines the amazing tastes of curry with the ever increasingly popular avocado. It is a fantastic dish for food and vegetarians and even vegans when prepared right. The avocado gives the curry some texture and chewiness that acts as an excellent substitute for meat. This curry is a bit sweeter than some other curries you might have tried in the past. Make sure to offset the sweetness with lime and spiciness if it’s too sweet.

Ingredients

oz coconut milk: 14

large avocado - peeled, pitted, and diced: 1/2

cup water: 1/2

tbsp seasoning sauce: 3

tbsp green curry paste: 2

lime – juiced: 1/2

cups green beans: 2

oz tempeh – cubed: 8

carrot – chopped into matchstick sized pieces: 1

large avocado - peeled, pitted, and diced: 1/2

zucchini – cubed: 1

cup basil leaves: 1

fresh Basil

How To Make Avocado Curry

  • Blend coconut milk, curry paste, 1/2 cup water, seasoning sauce, lime juice, and 1/2 avocado in a blender until smooth.
    • Note: Add more water if curry is too thick.
  • Pour curry into a large saucepan and bring it to a boil.
  • Reduce heat to a medium temperature.
    • Stir curry, green beans, and tempeh.
  • Cover saucepan and cook the curry till the point the carrots and beans turn soft.
  • Add the remaining basil, 1/2 avocado, and zucchini.
    • Cook until basil is wilted while stirring.
