tbsp canola oil: 1

large yellow onion – chopped: 1

large yellow bell pepper – chopped: 1

tbsp ketchup: 3

tbsp oyster sauce: 2

tbsp soy sauce: 1

cup chicken broth

tsp white sugar: 1

tsp Thai garlic chili paste: 1

skinless, boneless chicken breast halves - cut into bite-size pieces: 4

zucchini – chopped: 1

yellow squash – chopped: 1

oz broccoli – chopped: 6

oz fresh mushrooms – quartered: 8

cup unsalted cashew nuts: 1/2

How To Make Authentic Thai Cashew Chicken

  • Heat the oil in a skillet over medium heat.
    • Cook the yellow bell pepper and onion until they turn tender.
    • Add the sugar, chili paste, soy sauce, chicken broth, ketchup, and oyster sauce.
  • Place the mushrooms, zucchini, squash, broccoli, and chicken in the skillet.
  • Continue to cook and stir until the vegetables are tender and chicken juices run clear.
  • Mix in the cashews just before serving.
