Ingredients

oz dried rice noodles: 12

cup white sugar: 1/2

cup distilled white vinegar: 1/2

cup fish sauce: 1/4

tbsp tamarind paste: 2

tbsp vegetable oil: 1

boneless, skinless chicken breast halves – sliced into thin strips: 2

tbsp vegetable oil: 1

tsp garlic – minced: 1 1/2

eggs – beaten: 4

tbsp white sugar: 1 1/2

tsp salt: 1 1/2

cup peanuts – coarsely ground: 1

cups bean sprouts: 2

cup fresh chives – chopped: 1/2

tbsp paprika: 1

lime – cut into wedges: 1

How To Make Authentic Pad Thai with dried rice noodles and chicken

  • Cover rice noodles with several inches of room temperature water inside a large bowl.
    • Soak for 30 to 60 minutes.
    • Drain
  • Whisk fish sauce, sugar, vinegar, and tamarind paste in a saucepan at a medium temperature.
    • Bring to a simmer.
    • Remove from the heat.
  • Heat 1 tbsp vegetable oil in a skillet at a medium-high temperature.
  • Add chicken.
  • Cook and stir until the chicken is thoroughly cooked through.
    • Remove from heat.
  • Heat 1 tbsp oil and minced garlic in a large wok at a medium-high temperature.
  • Stir in eggs and scramble them until they are just about cooked through.
  • Stir in cooked chicken breast slices and rice noodles.
  • Stir in tamarind mixture, salt, and 1 1/2 tablespoons sugar.
    • Cook until the noodles turn tender.
  • Stir in peanuts and cook until they are heated through.
  • Garnish with lime wedges, bean sprouts, chives, and paprika.
