Andhra Prawn Fry

The Andhra Prawn Fry is a highlight of Andhran cuisine and has frequently been touted as a highlight of Indian seafood recipes as well. It represents the perfect marriage between the flavors of the spices used in it and the tenderness of the prawns. It takes less than half an hour to prepare but will surely leave you wanting more.

Andhra Prawn Fry taste great when they are served hot. Pack them in insulated food containers or lunch box so you can eat it warm after a few hours.

Ingredients

prawns - shelled and de-veined: 250 gm

curry leaves: 10

onion paste: 1/2 cup

ginger-garlic paste: 2 tsp

coconut- grated: 2/3 cup

whole red chilies-soaked in a little water for 1 hour: 3

ground to a paste with coconut: 3

coriander powder: 2 tsp

Turmeric powder: 1/2 tsp

tsp of salt: 1

tamarind pulp: 2 tsp

coriander leaves for garnishing

How To Make Andhra Prawn Fry

  1. Carefully clean and wash the prawns. Make sure you’ve properly drained the prawns afterwards.
  2. Mix the garlic and ginger paste together well.
  3. Add ¼ tbsp of red chili powder, salt and lemon juice to this paste.
  4. Marinate the prawns using this mixture.
  5. Cover them up and store at room temperature.
  6. Heat up the pan with oil.
  7. Add cumin, curry leaves and green chilies and sauté it till the leaves turn crisp.
  8. Add onions, salt and some more oil.
  9. Let this mixture simmer until they caramelize.
  10. Now add the marinated prawns and fry for 2 to 3 minutes.
  11. Add more red chili powder, turmeric and masala. Keep stirring for 5 more minutes.
  12. Sprinkle in some water and cook them in it until it comes to a boil.
  13. Let it simmer on a low heat flame until they turn pink.
  14. Garnish them with coriander leaves.
  15. Serve it hot.
