Ingredients

1 whole chicken (2-3 pounds), bones and skin removed, and cut into pieces

2 tsp curry powder

1 onion, chopped

1 can (14.5 ounces) of whole peeled tomatoes, drained

2 cloves garlic, peeled and finely chopped

1 lemon, juiced

1 bay leaf

1 can (14 ounces) of unsweetened coconut milk

1 tbsp olive oil

1/8 tsp salt

How To Make African Curry

  • Pour olive oil into a large skillet and heat over medium heat.
  • Add onion, garlic, and bay leaf, stir, and sauté until onion is light brown.
  • Add tomatoes, curry powder, and salt into the skillet and cook for about 5 minutes.
  • Mix in the chicken pieces and continue cooking for another 15 to 20 minutes. Make sure the chicken is no longer pink and juices run clear.
  • Reduce the heat to low and stir continuously.
  • Gradually pour and mix in the unsweetened coconut milk.
  • Before serving, add a few drops of lemon juice.
  • Serve hot.
