From the title of this article, you must realize that in we are going to talk about aamras, a popular dessert in most Indian restaurants, especially in the western parts of India (state of Maharashtra and Gujarat). There is not a single wedding you will attend in Gujarati or Maharashtrian states and not have the opportunity to taste aamras. It is a delicacy loved by all.

Aamras is a one of a kind Indian dessert. First and foremost, it is delicious. The rich nutritional value and numerous health benefits that come along with it are bonuses.

Aamras is derived from two Indian words (“aam” for mango and “ras” for juice). Combining the two words creates mango juice or aamras.  In a nutshell, it is mango puree; a popular drink served during the summer when the mangoes are in plenty.

There are a variety of mangoes around the globe and you can use any for puree. However, there is one variety that I can guarantee makes an excellent aamras, the Alphonso. It is a fibreless variety, native to India that will make sure your aamras turns out as expected.

Ingredients

large & ripe Alphonso/Kesar mangoes: 3

powdered cardamom: 1/2 tsp

powdered ginger: 1/4 tsp

A pinch of saffron

Water or milk as required (optional)

How To Make Aamras

  1. Rinse the mangoes, then peel, and chop them.
  2. Blend the chopped pieces.
  3. Add the powdered cardamom and crushed saffron strands together
  4. Pour into a bowl and put in a refrigerator to chill

Note: You can serve aamras with chapatis or pooris.
