oz cooked and drained lasagna noodles: 8
cup tomato sauce: 1/2
ounces extra firm tofu: 14
cup soymilk: 1/4
oregano: 1 tsp
basil: 2 tsp
salt: 1 tsp
lemon Juice: 2 tbsp
minced garlic cloves: 2
small minced onion: 1
cups chopped spinach: 2
olive oil: 1/4 cup
medium julienned sweet red pepper: 1
oz sliced mushrooms: 8
small sliced zucchini\: 2
shredded medium carrots: 2
cups tomato sauce: 1 1/2
water: 1/2 cup
How To Make Vegan Lasagna
- Preheat the oven to 350 degrees Fahrenheit.
- Blend tofu, soymilk, basil, oregano, lemon juice, salt, onion, and garlic in a food processor until it has the consistency of ricotta cheese.
- Add chopped spinach, stir, and set tofu mixture aside.
- Place a large saucepan over medium-high heat.
- Add red pepper, zucchini, mushrooms, and carrots and sauté until tender and crispy around the edges.
- Add tomato sauce and water, and stir well.
- Bring mixture to a boil, then reduce heat to a steady simmer and cover.
- Allow to reduce for 30 minutes, stirring every now and then.
- Pour 1/2 cup of tomato sauce into lasagna pan and spread to cover the bottom.
- Layer with noodles.
- Rotate between a layer of 1/2 the tofu mixture, a layer of noodles, a layer of 1/2 the veggie mixture, and another layer of noodles until all ingredients are incorporated.
- Bake in preheated oven, uncovered, for 30-35 minutes. When done, remove and allow to set for 5-10 minutes.
- Cut your Vegan Lasagna into squares, serve hot, and enjoy!
