Shish Tawook Marinated Chicken

Shish Tawook Marinated Chicken is a traditional Lebanese dish that is probably one of the tastiest and most famous BBQ chicken recipes around. In fact, it is one of the go-to meals of every household, in every Middle Eastern country.

It is quite versatile. It can be served in a sandwich, in a bread roll, and even with rice. And if you are watching your calories, you can pair it with salad and enjoy the burst of flavors in your mouth–without feeling guilty!

Ingredients

½ cup lemon juice (freshly squeezed)

1/3 cup Greek yogurt (plain fat-free)

2 tbsp apple cider vinegar

¼ tsp ginger (grounded)

¼ tsp ginger (grounded)

1 tsp tomato paste

2 lbs chicken breasts (boneless, skinless and cut into cubes)

3 cloves of garlic (crushed)

6 tbsp olive oil

1 tsp pepper (freshly grounded)

½ tsp dried oregano

1 tsp salt

How To Make Shish Tawook Marinated Chicken

  • In a large zip lock bag, add the ingredients – lemon juice, yogurt, vinegar, ginger, paprika, tomato paste, garlic, olive oil, pepper, oregano, and salt.
  • Seal the bag and mix well until all the ingredients are well combined.
  • Add chicken to the zip lock bag.
  • Place the zip lock bag in a glass bowl and in the refrigerator to marinate for at least 4 hours.
  • Half an hour before preparing the shish tawook marinated chicken, dip the wooden skewers in water. (skip this step if using iron skewers)
  • Remove the marinated chicken from the refrigerator and insert the chicken cubes onto skewers.
  • Prepare the grill, and cook the chicken skewers for 12-16 minutes, or until they are golden, moist and cooked through. Turn the skewers frequently to cook on all sides. (chicken skewers can also be broiled or cooked on a grill pan on the stove)
  • As soon as the chicken is grilled, remove from the skewers and transfer into a lidded pot to keep warm.
  • Serve with rice or pita breads.
