Romaine with Garlic Lemon Anchovy Dressing

This romaine with garlic lemon anchovy dressing is a fantastic salad to add to your salad library. The romaine lettuce the recipe calls for is pretty standard fare. What really sets the recipe apart however, is the custom made anchovy dressing. The mild taste of the anchovies is buttressed by the lemon and Parmesan. Those not familiar with anchovies may find them to be a bit too pungent. If that’s the case, simply increase the amount of lemon.

Ingredients

clove garlic – minced: 1

anchovy fillets – rinsed and patted dry: 2

tsp fresh lemon juice: 2

cup extra virgin olive oil: 1/4

head romaine lettuce: 1

lb Parmesan cheese: 1/4

salt and pepper to taste

How To Make Romaine with Garlic Lemon Anchovy Dressing

  • Separate the romaine lettuce leaves.
    • Cut the leaves crosswise into ½ in wide pieces.
    • Wash well, and spin dry.
  • Shave 1/3 cup of Parmesan curls using a vegetable peeler.
  • Puree garlic and anchovies with lemon juice in a blender.
  • Add oil in a stream while the blender is running until the dressing is fully emulsified.
  • Season with salt and pepper.
  • Toss the romaine lettuce with dressing in a bowl with 1/4 cup Parmesan curls.
  • Serve salad in 2 plates and sprinkle with remaining Parmesan curls.
