fresh coconut - chopped: ½ cup
pudina/mint – loosely packed: ¾-1 cup
fried gram or bhunachana dal: 1.5 tbsp
cumin: ½ tsp
ginger or 1-2 cloves garlic: ½ inch
green chilli peppers: 2-3
tamarind paste – can substitute lemon juice: 1 tsp
salt to taste
oil as needed
red chilli – broken: 1
mustard: ¼ tsp
urad dal: ½ tsp
hing: 1 pinch
How To Make Pudina Chutney
- Rinse mint leaves in clean water.
- Drain completely and pat dry.
- Blend green chilli, dal, ginger or garlic, coconut, salt, and mint inside a blender.
- Add water a little at a time, scraping excess off the sides of the blender.and blending again until you reach your desired texture.
- Add lemon juice; adjust salt and chilli to taste.
- Heat oil in a pan and sauté the mustard, dals, and red chilli until golden brown.
- Add hing, combine well, and take off the heat.
- Combine and stir well.
- Serve with dosa, idli, or any other snack or breakfast you like.
