Potato sambar is one of those dishes that can be considered to be a staple of Indian cuisine. Sambar is a type of lentil-based veggie chowder or stew that is eaten all throughout the Indian subcontinent. It is prepared a little differently in South India and Sri Lanka, where it is cooked using a tamarind-based broth. This dish is great for vegetarians and vegans because the potatoes give the stew a chewiness that is compatible with meat.

Ingredients
masoor dal or moong dal: ½ cup
potato – cubed: 1 large
onion – chopped into large chunks: 1 small
sized tomato – cubed: 1 medium
chillies – slit: 2 green
homemade sambar powder: 3 tbsp
tamarind pulp: 2 tbsp
salt to taste
sugar: 1 tsp
Coriander leaves – handful chopped
oil: 2 tbsp
mustard seeds: 1 tsp
cumin seeds: 1 tsp
asafoetida: ¼ tsp
curry leaves: 1 sprig
How To Make Potato Sambar
- Heat a pot.
- Add in dal, potato, tomato, onions, green chilli.
- Cover with water and bring to a boil.
- Simmer it for 20 to 30 mins till the dal and everything is cooked.
- Add in sambar powder, tamarind pulp, salt and sugar.
- Mix well and simmer for 5 mins.
For Seasoning
- Heat oil.
- Add in all the seasoning ingredients in it.
- Let sizzle for 30 seconds.
- Pour over the sambar
- Mix well.
- Add in coriander leaves and mix well.
- Serve with rice.
