Peanut Sundal | Verkadalai Sundal

Peanut sundal, also known as verkadalai sundal, is one of the very many varieties of sundal, which is traditionally prepared during the nine days of festivities of the Navratri festival. The key to this dish is its content of boiled peanuts, which are nutritious and have their own set of health benefits. Some people may not like the taste of boiled peanuts – it’s fair to say it’s an acquired taste – but that isn’t a problem with this recipe which makes use of many different spices and herbs.

Ingredients

peanuts – dry: 1 cup

coconut – coarsely grounded: 1/8 cup

salt to taste

For tempering

oil : 2 tsp

mustard : 1 tsp

urad dal : 1 tsp

red chillies: 2-3

curry leaves : 1 sprig

asafoetida : 3 pinches

How To Make Peanut Sundal | Verkadalai Sundal

  1. Soak the peanuts for 1-2 hours.
  2. Drain the nuts.
    1. Pressure cook for 3 whistles with 3/4 cup water and salt.
    2. Drain and set aside.
  3. Heat a pan with oil.
    1. Temper with the items listed under ‘For tempering’.
  4. Add the drained peanuts and stir for a minute.
  5. Add the coconut and mix well for a minute.
