Oyster & Brie Champagne soup

This Oyster and Brie Champagne soup is every soup and oyster lover’s dream come true. It is a creamy soup with oyster, a known aphrodisiac, which makes the perfect “Lover’s Delight”.

It is a dish perfect to make for a romantic candle night dinner at home or for Valentine’s Day.

Oysters have high amounts of zinc which beneficial for the immune system and it also provides generous levels of calcium, vitamin C, omega 3 fatty acids, iron, and protein.  They are low in cholesterol as well which makes them the perfect food to consume all year round and not just during months with the letter “R” in them.

Ingredients

stick of butter: 1/2

large shallot, cut up: 1

tsp of red pepper flakes: 1/2

cup of all-purpose flour: 1/4

cups of fish stock or you can substitute it with clam juice: 3 1/2

cups of heavy cream: 2

pounds of Brie cheese with rinds removed and the cheese cut up: 3/4

a bunch of chives cut up: 3/4

salt

black pepper

a cup of champagne

fresh oysters: 2 dozen

How To Make Oyster & Brie Champagne soup

  • In a large skillet set over low heat melt the 1/3 stick of butter. To the melted butter add the shallots and red pepper flakes and saute them until softened.
  • On top of the mixture, sprinkle the flour and cook it until you see it turning slightly brown, which should take you about a minute.
  • Slowly add the stock and the cream to the mixture and increase the heat to medium-high and bring it to a boil.
  • Reduce the heat to medium-low and let it simmer for 10 minutes.
  • To the now heated components add the Brie, chives, salt, and pepper (to taste).
  • Stir the mixture until it melts.
  • Then add the champagne and oysters to the mixture and cook for 3 minutes.

Trivia

The idea that the oysters are aphrodisiac is not yet proven. They do contain elements of phosphorous and iodine which has been known to increase the human stamina and the zinc aids in the production of testosterone.  American and Italian researchers have found that a sort of mussel that is identified with oysters tends to contain two rare amino acids: D-aspartic and N-methyl – D aspartate which has been shown to increase sperm amount and stimulate the testosterone present but there is no evidence that demonstrates an increase in the libido.
