Ingredients

1 1/2 cup kaju or cashew nuts

cup sugar: 3/4

cup water: 1/3

tsp ghee — for greasing: 1/2

How To Make Homemade Kajuki Barfi

  • Grind cashew nuts to a smooth powder in a grinder.
  • Heat water in a heavy bottomed pan.
  • Add sugar to the water and cook on a low flame.
  • Stir the water and sugar constantly in the pan until sugar dissolves.
  • Keep cooking on low flame till the sugar syrup becomes thick and is of one-string consistency. When you put a drop of sugar syrup between your thumb and finger and pull the finger away, a thread should be formed.
  • Add the cashew powder to the sugar syrup and mix well.
  • Cook this mixture of cashew paste for 6 minutes, stirring continuously until it thickens.
  • Remove from the flame. Transfer this cashew paste to a large bowl.
  • Cool the cashew paste for 8 minutes and then knead into a dough.
  • Make a big ball of the cashew dough.
  • Grease a plate with ghee.
  • Flatten the cashew dough gently in the greased plate with a rolling pin.
  • Cool the flattened cashew dough completely and then cut into preferred shapes.
