Ingredients
tamarind: 1 small
onions – peeled: 1/3 cup
garlic – peeled: 1/3 cup
jaggery: 1 pinch
salt as needed
turmeric: ¼ tsp
pepper powder (optional): ¼ tsp
curry leaves: 1 sprig
sambar powder: 2 tsp
mustard: ¾ tsp
urad dal: 1 tsp
toor dal: 1 tsp
fenugreek seeds: 12 tsp
cumin seeds: 1 tsp
oil: 1 tbsp
How To Make Garlic Kuzhambu
- Soak tamarind in warm water for 1/2 hr.
- Extract the tamarind juice.
- Heat kadai with oil.
- Pour in tempering items followed by curry leaves, onions, and garlic.
- Cook until the both the onions and garlic turn golden brown.
- Add tamarind extract, turmeric, salt, jaggery, and sambar powder.
- Stir well and bring to a boil.
- Simmer till the kuzhambu thickens and the onions and garlic are cooked thoroughly.
- Add pepper powder and switch off.
