Corn Relish

Corn relish is a dish that can be used for garnish or as a side dish to your favorite grilled meaty bites or potatoes. It is super easy and can be simply cooked on the stove. This old-fashioned dish is sure to bring back memories from grandma’s house.

Ingredients

corn ears (husked and cleaned): 8

tomatoes (peeled, seeded and chopped): 2 pounds

green bell peppers--chopped: 1 1/2 cups

chopped red bell pepper: 3/4 cups

cucumber chooped: 1/2

chopped onion: 1 cup

white sugar: 1 cup

apple cider vinegar: 2 cup

tbsp of salt: 1

celery seed: 1 tsp

mustard seed: 1 tsp

How To Make Corn Relish

  1. Take the corn cobs and cut the corn from the cobs. Scrape the corn with the help of a large spoon or with the back of a knife to remove the remaining juices in the cob.
  2. Take a large sized saucepan and add these corn kernels and its juice. Then add chopped red bell peppers, green bell peppers, tomatoes, onion, and cucumbers an mix them with the kernels.
  3. In a medium-sized bowl pour the apple cider vinegar and add sugar. Stir until the sugar is semi-dissolved. Now add mustard seed and celery seed along with some salt for seasoning.
  4. Pour this liquid mixture on the mixed vegetables in the saucepan and place the pan on heat. Bring this mixture to a boil and after the first boil let it simmer on low heat for an hour.
  5. Turn off the heat and let the pan cool until it reaches room temperature. Transfer the prepared relish to sterile jars and store them in the refrigerator.
