Chicken salad with Thai-flavored dressing is a perfect combination of creamy, tangy, and crunchy flavors, all at the same time! It is a lip-smacking salad with the incredible flavors and textures of peanuts, lime, green papaya, juicy chicken, colorful peppers and cilantro, topped with a delicious Thai dressing. The dressing is nutty, creamy, and flavored with soy sauce, rice vinegar, a hint of honey and the magic of sesame oil. This salad is so filling that it can be had as a part of your lunch or on the side with rice or noodles.

Ingredients

2 tbsp soy sauce

1 tbsp fish sauce

2 tbsp rice vinegar

1 red chili — deseeded and finely chopped

1 tbsp brown sugar

3 tbsp smooth peanut butter

3 tbsp smooth peanut butter

1 tbsp lime juice – freshly squeezed

2 tbsp olive oil

1 tsp sesame oil

¼ tsp salt

12 oz boneless, skinless chicken breast

2 cup Chinese cabbage – shredded

1 cup green papaya – shredded

1 cup green onions – chopped

1 cup colored bell peppers — chopped

1 cup carrot — shredded

½ cup peanuts – chopped

1 tbsp fresh cilantro — chopped

How To Make Chicken Salad with Thai-Flavored Dressing

  • Heat water in a large pot. On boiling, add the chicken breasts and cover with a lid. Cook on a medium flame for 20 minutes.
  • Remove the chicken from the heat, drain water, and shred with forks on cooling.
  • Transfer the shredded chicken and all shredded and chopped vegetables (cabbage, papaya, onions, bell peppers, and cilantro) in a large mixing bowl and toss. Chill for some time.
  • Blend garlic, peanut butter, soy sauce, lime juice, rice vinegar, sesame oil, fish sauce, red chili, sugar, and olive oil in a blender jar for 45 seconds. If the dressing is thick, add 1 tsp of warm water.
  • Pour the Thai-flavored dressing over the shredded chicken and vegetables. Toss and garnish with chopped peanuts and cilantro.
