Ingredients

1 tsp vegetable oil

1 large onion

2 garlic cloves

2 tsp fresh ginger root, minced

1 tsp ground cumin

1 ½ tsp ground cinnamon

1 ½ tsp ground coriander

1 pinch ground cloves

3 medium tomatoes, chopped

1 ½ lb sweet potatoes

1 carrot, chopped

4 ½ cups of water

1 tsp salt

¼ cup dry un-salted roasted peanuts

1 pinch of cayenne pepper

2 tbsp creamy peanut butter

How To Make African Sweet Potato and Peanut Soup

  • In a saucepan, heat oil over medium heat.
  • Sauté the chopped onions for ten minutes, until they turn light brown.
  • Add coriander, garlic, cumin, ginger, cloves and cinnamon to the pan.
  • Stir in the sweet potatoes, tomatoes and carrot and mix well.
  • Pour water in the saucepan, add salt and bring to boil and then simmer for thirty minutes on low heat.
  • Pour the soup to a blender, add peanuts and blend the soup until it is smooth.
  • Pour the soup into the saucepan again and add cayenne pepper.
  • Add peanut butter to the soup and whisk it until the cream has completely blended.
  • Cook until the soup is hot and bubbles from the corners.
  • Pour into a serving bowl and top garnish fresh cilantro.
