    Basundi is a dessert popular in the western part of India. It is made by simmering milk with sugar, fragrant spices like cardamom, saffron or nutmeg, until very thick. Nuts and dried fruit are often added. The addition of sweetened condensed milk shortens the simmering time.

    How to Make Basundi

    1. Place a heavy-bottomed pan over low heat. Add milk and condensed milk and bring to a low boil.
    2. Continue stirring over low heat, scraping milk solids from the sides back into the milk as it boils.
    3. Add sugar, cardamom, and saffron, and keep stirring until milk reduces to one-third of its original volume, about 25 minutes. Stir in nuts.
    4. Serve hot, warm or chilled.

    Note: Constant stirring helps prevent milk from sticking to the surface of the pan and burning.
